Recipe: Blueberry French Toast
Blueberry French Toast
I got this recipe from my Aunt a few years ago and it’s a big hit around here. Unfortunately it’s better as a brunch for a larger crowd than it is for only 2 or 3 people so I don’t make it very often but when I do it’s always yummy.
1C Brown Sugar
1 stick butter
2 Tbsp light corn syrup
1 baguette loaf
2-3 cups blueberries
3 oz cream cheese cut into small pieces
1/2 tsp cinnamon
1/4 tsp nutmeg
1C whole milk
1 tsp vanilla
Melt brown sugar, butter and corn syrup together and pour into 9×13 baking dish.
Cut baguette loaf into 1 inch cubes and put half into batter in pan.
Pour in blueberries and top with cream cheese cubes.
Sprinkle with sugar and spices.
Top with remaining bread cubes.
Whisk together eggs, milk and vanilla and pour over bread mixture.
Cover with tin foil and refrigerate over night.
Bake at 350 for 35-45 minutes.
This recipe truly is awesome!
I have been known to make it a triple berry, using the same ratio.
The last time I made it I accidentally used Cayenne pepper (It IS the same colour as the cinnamon and I didn’t smell it first) but I realized it before I got to far so I added the Cinnamon plus and extra half teaspoon and it turned out great! It had a little bit of heat but not so much it was inedible. In fact it gave it just enough of a kick to help with energy levels without me having to live on Rolaids or Tums or something for the rest of the day.
