Pineapple Sausage Skillet
This recipe is totally awesome! Even my kids would come back for more when they were younger! Now that they’re older? “Mom, can you make that pineapple stuff?” lol
I can’t copy and paste the recipe :(. The sausage meat it calls for is usually found in your freezer section! Around here it’s made by Maple Leaf. It also calls for a can of pineapple tidbits, reserving the juice to make 1 1/3 cups liquid with added water. It tastes MUCH better if you use fresh pineapple, right from the fresh fruits and veggies section of the grocery store, and I buy a carton of pineapple juice to use instead of the syrup (what I buy is made by Oasis, I think, and is in a 1 L juice box. You can also buy cans of pineapple juice, which is fine if you can remember to actually drink it!) It also says to use rice but it doesn’t say WHICH rice to use. We use minute rice since, in my estimation, the long cooking stuff would take way too long to make with this recipe.
